Chickpea Stew

Ingredients:
1 zucchini (diced)
2 carrots (cut into slices)
1 bunch of scallions (cut into rings)
1 cup of basmati rice
1 cup chickpeas (from the tin)
½ can of coconut milk
fresh coriander
olive oil
sea-salt
vegetable stock
Preparation:
Step 1: fry the scallions in olive oil, then add the carrots and zucchini and fry
Step 2: pour about 2 cups water or vegetable broth and add the basmati rice, simmer for 10-15 minutes, until the rice is cooked and the vegetables are firm
(Add liquid if necessary)
Alternative: cook the rice separately and mix later with the vegetables
Step 3: Now add the coconut milk and the chickpeas, warm them up, add salt
Step 4: Finally sprinkle with fresh coriander leaves
